Step 1: Sauce ... Add the peanut butter, coconut milk, ginger, garlic, brown sugar, lime juice, siracha, soy sauce, and sesame oil, to a blender. Mix well by pulsing until well combined. Add water, a little at a time until you get a nice smooth consistency; finish by adding the cilantro and pulse until it is completely mixed. Add the sauce to a small bowl or a tupperware type of container and refrigerate at least 1 hour before using.
Step 2: Note: I add only half of the siracha to start and taste after all the ingredients are added and mixed through ... you can always add more, but you can't take any away. Add until you get the flavor you like.
Step 3: Noodles ... Cook the noodles or pasta according to package directions. Remove from the heat, drain, and return to the pot to dry the noodles before adding the sauce. You don't want a wet noodles dish.
Step 4: Finish ... Add the pasta to a serving bowl along with the peanut sauce (as much as you like), scallions, and sesame seeds, and toss to combine.
Step 5: Serve and ENJOY! It is such an easy and quick sauce to prepare. Obviously, I like to pair this with other Asian dishes, but it's really good with just about anything.
