Step 1: Heat oven to 200F and line a baking sheet with parchment paper. If you don't have parchment paper, spray the baking sheet with cooking spray.
Step 2: Thinly slice the beets. A mandoline works best.
Step 3: Lay slice on parchment paper as closely as possible.
Step 4: Bake 2 hours. Check periodically to make sure the slices do not burn. You may have to remove the thinner slices sooner, and allow the thicker slices to bake more than 2 hours.
