Step 1: Preheat oven to 350 degrees F, then set oven rack to lowest position.
Step 2: Place empty pie shell onto a baking sheet then bake for 6 minutes; remove and set aside.
Step 3: In a medium skillet cook the sausage meat with Italian seasoning, onion, bell pepper and garlic until no longer pink (about 10 minutes) drain fat then mix in the mushrooms; transfer the mixture into the prebaked pie crust.
Step 4: In a bowl whisk the eggs with cream and black pepper until well combined then mix in 1 cup mozzarella cheese (season with seasoned salt or white salt if desired) pour over the sausage mixture.
Step 5: Bake 350 degrees F (on a baking sheet) for about 35 minutes or until just set.
Step 6: Immediately sprinkle the remaining 1 cup shredded mozzarella cheese over the top and allow to melt, then slice as desired.
