Step 1: Combine the first 4 ingredients in a small bowl and set aside. Heat wok or large frypan on medium high heat until very hot; add first amount of cooking oil; add pork, stirfry for about 5 minutes until it starts to brown; remove to a plate.
Step 2: Heat second amount of cooking oil if necessary in the same wok; add onion and ginger; stirfry for about 3 minutes until onion is tender crisp; add the Swiss chard and turn contents over and over to mix well. Stir cornstarch into sauce mixture and add to onion mixture in the wok. Add the pork; heat and stir for about 2 minutes until the sauce is boiling and thickened. Sprinkle with Sesame seeds and serve hot over rice.
