Sausage Jalapeno Stuffed Mushrooms

1 tablespoon oil
2 pounds large button mushrooms (stemmed and wiped off or use whatever mushroom that you want)
1 pound pork sausage (bulk like Jimmy Dean`s)
1/4 cup white onion, finely chopped

1 to 2 jalapeno peppers, minced
2 teaspoons garlic powder
1 cup monterey jack cheese, shredded (divided)
Jalapeno slices (for the top of each mushroom cap, as many as you need using 1 slice for each mushroom)

Step 1: Preheat oven to 375 degrees F and coat a baking sheet with nonstick cooking spray.
Step 2: In a large skillet, heat oil over over medium-high heat. Add sausage, onion, minced jalapenos and garlic powder. Stir to break up meat and cook until sausage is done, about 8 minutes. Remove from heat. Mix in 1 cup shredded cheese
Step 3: Fill each mushroom cap with sausage mixture.
Step 4: Place a jalapeno slice on top of each cap.
Step 5: Place mushrooms on sheet.
Step 6: Bake for 7-8 minutes.
