Step 1: Pears ... Cut the pear in half, leaving the stem on. Then using a spoon or melon baller, scoop out the core and seeds - this is where the filling goes. Cut a little slice off the bottom so the pears will set in the casserole dish, cut side up, without rolling over. Then squeeze the lemon over the pears so they do not brown. Make sure to get them all covered.
Step 2: Filling ... Mix the cheese, cranberries, and nuts together; then, fill the pears, mounding it up where you scooped out the core and seeds. I prefer gorgonzolo, but use your favorite blue cheese.
Step 3: Sauce ... Add the cider to a measuring cup or small bowl - and try to get real apple cider; most grocery stores carry it year round. Apple juice can be used, but it doesn't have the same flavor. Also, add the brown sugar and mix well. Microwave for 30 seconds to 1 minute on medium heat, just until the sugar melts.
Step 4: Bake ... Preheat the oven to 375 degrees. Add the pears to a small baking dish (making sure the dish is not too large for the amount of pears). You want them to fit nicely in the dish; then, add the cider/brown sugar mix to the bottom of the pan around the pears. Bake uncovered for approximately 30 minutes on the middle shelf. Just check after 25 minutes; you want the pears fork tender and the cheese melted. Baste the pears with the cider mix a couple of times during baking - this will give them a nice golden color and add sweetness.
Step 5: Serve ... Transfer the pears to a serving dish/platter and pour any extra cider over the pears. ENJOY! As mentioned, you can serve over some greens as a salad; or, as is as a side dish.
