Step 1: Layer the prepared tomatoes with the pickling salt. Add enough cold water to cover the tomatoes. Cover and refrigerate overnight
Step 2: Drain and rinse the tomatoes.
Step 3: Place tomatoes in a large pot, add onions, apples, peppers and vinegar. Bring to a boil, simmer for 30 minutes
Step 4: Tie the pickling spices in a gauze bag and add to the pot
Step 5: Stir in the brown sugar, simmer over low heat for 2 hours, Stir often be careful it doesn't scorch.
Step 6: Pour into sterilized jars, seal and waterbath them for 10 minutes
