Step 1: Chicken ... Prep your chicken. Make sure to clean your chicken - inside and out; let it come to room temperature, then pat it dry. Brush or rub with the olive oil and liberally coat with the cajun seasoning. Make sure to rub the seasoning all over the chicken.
Step 2: Beer ... Prepare your beer can. Pour out half or a little more of the beer - and drink the rest!! Ok ... after you pour out the beer, use a can opener and take off the top of the can. Then add the shallot, garlic, and squeeze 1/2 of orange into the can. Also, add a couple pieces of the squeezed orange (the rind) into the can as well. It will add lots of flavor.
Step 3: Grill ... Place your chicken on the can, Tuck the wings underneath, and then place on the grill. For me - One side of the grill should be on high heat, and the side where the chicken sets should be on medium. This allows the chicken to cook slowly, without burning. This also gives a nice circulation of heat creating a very moist chicken. Every grill is different, so you will just have to experiment which works best. I like to grill on 'indirect heat' which really creates a moist juicy chicken. It will take approximately 45-60 which I find to be the average grilling time. Again, this can vary.
Step 4: Sauce ... Melt the butter and add the juice from the other half of the orange along with the pepper. This will be brushed on the chicken as it grills. Brush it on 2-3 times during grilling.
Step 5: Serve ... Remove from the grill and let it rest a good 5-10 minutes, covered, before slicing. ENJOY! a very moist flavorful chicken.
