Step 1: Stir mashed potato and tuna together in a bowl. Add ketchup, garlic, green onion, Italian seasoning, egg, hot sauce and salt and pepper to taste.
Step 2: Form the mixture into eight patties. Pat bread crumbs into the cakes to coat. Set on a baking sheet and refrigerate for 1 hour.
Step 3: Pour about 1/4-inch layer of canola oil into a large skillet and set over medium-high heat. Fry cakes in hot oil for about 6 minutes, flipping once midway through cooking time, until lightly browned.
