Step 1: Split vanilla beans down side with a sharp knife. Place vodka in a clean glass jar. Add beans to vodka. Seal lid and place in dark, cool place away from light for 3 months (even more time is better).
Step 2: Give it a shake once a week or so. In 3 months you will have vanilla extract that you can use in recipes.
Step 3: The vanilla extract will stay good for years. You can keep adding more vodka and vanilla beans to the bottle as it gets low to keep your supply going.
