Step 1: Combine gelatin and Kahlua in a large bowl. Allow gelatin to soften about 10 minutes.
Step 2: Meanwhile, brew 3 cups hot coffee.
Step 3: Add coffee, Stevia, and salt to gelatin mixture. Stir until Stevia is dissolved and mixture is clear.
Step 4: Pour into martini glasses or dessert dishes. Chill until set.
Step 5: When ready to serve (or up to 3 hours before serving), prepare whipped cream. In a chilled bowl, add whipping cream, powdered sugar, and Kahlua. Beat on low until ingredients are combined. Then increase speed to high and beat until soft peaks form.
Step 6: Top each dessert with 2 tablespoons whipped cream and sprinkle with 1 teaspoon of chocolate chips.
