Step 1: Cauliflower ... Add the chicken broth and the cauliflower to a microwave safe bowl and cover with plastic wrap. Microwave on medium heat for 10+ minutes until tender. I prefer to cook on medium so the cauliflower doesn't dry out. This can take anywhere from 10-15 minutes depending on your microwave and the type of bowl you are using. You want a large enough bowl so the cauliflower can cook evenly.
Step 2: Mash ... I used a potato masher which works great, but you can also use a fork. Mash until you get the texture you like. Then add in the Feta, provolone, half and half, butter, salt, pepper and half the parsley. Mash again and return to the microwave on high for 2 minutes. Stir well to combine. If you like a thinner texture - add a bit more chicken broth. That is up to you. I don't find it necessary.
Step 3: Serve ... Garnish with the remaining parsley and ENJOY!
