Step 1: Saute onion, pepper, and garlic in olive oil until soft. Add chopped spinach and cook until wilted.
Step 2: Beat the eggs with the cottage cheese until frothy. Add the thyme, salt and pepper to taste. Pour over the veggies and scramble.
Step 3: Plate and top with warmed marinara sauce. Sprinkle on parmesan cheese and serve.
