Fresh Green Bean Salad

Ingredients
- SALAD
- 1 pound green beans, fresh (rinsed, trimmed and cut in half, I use uncooked green beans but you can blanch them if you like)
- 10 ounces grape tomatoes, whole
- 3 ounces fresh spinach (baby spinach whole leaves, about 2 cups packed)
- 1 onion, red (small onion, halved and thinly sliced)
- 2 (14 ounce) cans hearts of palm, sliced into 1/2-inch slices or artichoke hearts, quartered
- DRESSING
- 1 lemon (juice of one lemon, 3-4 tablespoons)
- 1/4 cup balsamic vinegar
- 1/4 cup oil (olive oil)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh oregano, minced
- 2 garlic cloves, minced
- Sugar or sucralose, to taste (optional for a sweet taste)
- Feta cheese, to top (optional)
How to Make

Step 1: Mix salad ingredients together.

Step 2: Mix dressing ingredients together (except the feta).

Step 3: Toss everything together.

Step 4: Best if it stands for at least an hour at room temperature.

Step 5: To serve top each serving with feta, if desired.

Step 6: *This stores well for a long time in a large ziploc bag if you only add the feta when served.
