Mom's Oatmeal Cake

Ingredients
- 1 1/4 cup boiling water
- 1 cup quick oatmeal
- 1 cup white sugar
- 1 cup brown sugar
- 1/2 cup shortening
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaaspoon salt
- 1 1/3 cup flour
- Icing:
- 2/3 cup brown sugar
- 6 tablespoons Butter
- 1/4 cup cream
- 1/2 to 2/3 cup nuts
- 1/2 to 2/3 cup coconut
How to Make

Step 1: Pour Boiling water over Oatmeal, Stir and Let stand

Step 2: Cream sugars, shortening, eggs, vanilla, baking soda, cinnamon and salt

Step 3: Add oatmeal and flour to creamed mixture. Bake 30 minutes

Step 4: While hot pour on icing topping - To Make ICING

Step 5: Melt 2/3 cup brown sugar and 6 Tablespoons Butter 1/4 cup cream

Step 6: Add Nuts, Coconut - Cool to thicken a little

Step 7: Spread on cake and brown under- broiler. Mom broiled on same shelf she baked cake
