Step 1: Whisk the wine, oil, garlic and all the remaining spices in a bowl. Transfer to a resealable bag.Add in the roast and onions. Turn the bag a few times then refrigerate a day (24 hours).
Step 2: When you ready to gill. Preheat grill. Place roast on rotisserie spit making sure to get it as balanced as you can. Secure tightly and place on grill over a high heat. Reduce heat, or move coals away from roast after 15 minutes. Continue cooking until done, about 1 hour 10 minutes (for rare).
Step 3: Meanwhile pour 2 cups of the marinade into a saucepan. Bring to a boil. Remove from heat and add butter. Baste roast with mixture every 30 minutes during the cooking time.
Step 4: Remove the roast from spit. Allow to rest for 15 minutes, then slice and enjoy.
