Step 1: Saute onions and carrots in oil over medium-high heat for about 2-3 minutes, until soft. Add garlic; cook 1 minute. Add crushed tomatoes, chicken broth, salt and pepper and simmer partially covered 1 to 1 1/4 hours on low heat, seasoning with more salt and pepper halfway through cooking time.
Step 2: Add fresh basil last 10 minutes (herbs will become bitter if cooked more than 20 minutes).
Step 3: Taste the sauce for acidity, if sauce is a bit tangy (acidic) then add 1 tbsp of sugar or for a calorie free way to cut the acidity in the sauce add 1/2 teaspoon of baking soda. Any remaining sauce will freeze well.
