Step 1: Rinse the spinach well in water, then using a salad spinner spin the leaves until most of the moisture is removed.
Step 2: In a very large skillet or a large saucepan heat 3 tablespoons olive oil and sauté the garlic slices over medium heat for about 1 minute until fragrant but not browned.
Step 3: Add all the spinach, the salt, red pepper flakes (if using) and pepper to the pot, toss it with the garlic and oil, and cook it for 2 minutes, stirring often. Turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted and most of the liquid has evaporated.
Step 4: Using a slotted spoon, first squeeze the liquid against the side of the pot to remove any excess liquid. Season to your taste with salt and pepper. Transfer to a serving bowl.
Step 5: Drizzle the top with a little additional olive oil then squeeze a lemon over top. Sprinkle cheese over the top. Serve warm or at room temperature.
