Step 1: Combine all ingredients, except salt, in a 5 to 7-quart slow cooker. Cover and cook on LOW for 6 to 8 hours, until lentils are tender.
Step 2: If desired, blend 3 to 4 cups of this, about 1 cup at a time, to make a thicker soup. Or use an immersion blender and blend until you reach the consistency you desire
