Step 1: Burger ... Add the pepper, onion, garlic, bread crumbs, soy sauce, pineapple juice, salt, and pepper and mix well. Add the turkey and mix with your hand to incorporate all the ingredients. Try not to over mix as it can cause the burger to get tough. They will be very moist; so form your burgers, press an indentation in the center (to prevent them from 'puffing' up during cooking), and lay them on a sheet pan lined with parchment or foil and refrigerate until firm. I prefer to freeze them for 15-20 minutes (it is a lot quicker).
Step 2: Mayonnaise and Glaze ... As the burgers firm up, mix the mayonnaise, pineapple juice, soy sauce, garlic and scallions together and refrigerate until ready to use. Also mix the teriyaki and pineapple juice together in a small cup and set to the side as well.
Step 3: Burger ... I prefer to use my outdoor grill, but an indoor grill works fine. Cook your burgers until done or firm to the touch. Turkey needs to be cooked completely; but if you are using beef, they can be cooked to your likeness. As the burgers cook, brush with the terriyaki pineapple glaze. Add the onion and pineapple slices to the grill as well. I prefer 1 large onion slice and 2 pineapple slices per burger. Also, toast your rolls if you like.
Step 4: Serve ... Slather the top and bottom of your roll with the mayonnaise, then the chopped lettuce, burger, pineapple and onion and the top roll. ENJOY!
