Step 1: Preheat your oven to 400 degrees F. Mix up the topping mixture. Set aside.
Step 2: Cut apples in half and using a small knife, or a small metal spoon (or melon baller) scoop out the core. Place each half on a baking sheet.
Step 3: Fill the hole in each apple half with a few cranberries, about a tablespoon. If desired, place a pinch of sugar (I use Splenda) on top of the cranberries for a little sweetness or use a few Craisins (dried cranberries) instead (they are already sweet).
Step 4: Scoop about 2 tablespoons of the topping mixture over the cranberries, and roughly flatten it out over the top of the apple. The topping will spread very little if at all, so spread it all the way to the edge of the apple.
Step 5: Sprinkle the tops with a coarse sugar (I use Splenda), if desired, and bake for 23-25 minutes, or until just golden. Watch carefully so they don't burn.
Step 6: Let cool for a few minutes before serving with vanilla yogurt, whipped cream, or your favorite Vanilla ice cream. You can also top with a Maple Syrup or honey instead.
