Step 1: Preheat oven to 400 degrees F. In a large zip-lock bag, pound out each chicken breast to 1/2" thickness.
Step 2: Lightly salt and pepper each side of the chicken breasts. Then mix the mayonnaise and Dijon mustard together. Brush on each side of each chicken breast.
Step 3: In a dish large enough to accommodate each chicken breast, mix the crushed onion rings with the parmesan cheese and Emeril's Essence. Coat each chicken breast on both sides. Place on baking sheet that has been sprayed with non-stick cooking spray. Bake in preheated 400 degree F oven for 25 minutes.
