Step 1: Mix all of the filling ingredients together thoroughly.
Step 2: Divide the filling and spread evenly over the tortillas; roll up tortillas fairly tight like a jelly roll. Cover tightly with plastic wrap, twisting ends; refrigerate at least 4 hours or up to 24 hours.
Step 3: Unwrap; cut in slices 1/2 to 3/4 inches thick.
