Step 1: In a large bowl, combine mangos and sugars. Stir until sugars liquify. Cover with plastic wrap. Let set on counter overnight.
Step 2: In a large saucepan, pour mango mixture and the rest of the ingredients. Stir well, and occasionally for 45 to 60 minutes. Pour into sterile jars with lids. Keep well refrigerated for several months.
