Step 1: Boil potatoes until tender, about 15 minutes
Step 2: Combine leeks and milk, bring to a simmer, cook until leeks are tender, about 15 minutes. Be careful not to scorch the milk, only simmer
Step 3: Drain potatoes and mash until smooth
Step 4: Stir in oil, hot leeks and milk. Mash until lovely and smooth. Season with salt and pepper.
