Step 1: In a large sauce pan bring water to a boil and cook potatoes in water until tender, but not mushy. Drain well.
Step 2: In the meantime: Melt butter in large skillet. Add onions and cook until tender.
Step 3: Stir in cabbage or greens, and cook 5 more minutes, then remove from heat. Set aside.
Step 4: Using a mixer on medium setting, mash potatoes, milk, sour cream, salt and pepper.
Step 5: Stir in cabbage or greens mixture, making sure it is mixed in well.
Step 6: Spoon into serving dish, and cover with aluminum foil until ready to serve.
