Step 1: Put the beans in boiling water and cook for 7 minutes, remove, drain run under cold water
Step 2: Place the teaspoon of oil in a skillet and stir fry the peppers for 4 minutes
Step 3: Mix together the pepper and beans in an oven proof dish
Step 4: Sprinkle on the lemon zest, add lemon juice bake in 375 oven for 15 to 20 minutes just to heat through. Do not over cook - You want the veggies to have some crunch.
Step 5: Sprinkle on the toasted pine nuts and serve
