Step 1: Mayonnaise and Bacon ... Cook the bacon and crumble; or you can use a pre-cooked bacon - or even the Real Bacon Bits," as much as I don't like them that much; they work just fine in this recipe if that is all you have. Add the bacon, jalapeno, BBQ sauce and mayonnaise together and mix well. Cover and refrigerate until ready to use.
Step 2: Burgers ... Add the soup mix, worcestershire and water to a bowl and mix well. Add in the beef and mix by hand until combined. Don't over mix - it can cause a tough burger. Make into 4 patties and transfer to a baking sheet lined with parchment or foil. Make a dimple using your thump in the middle of the burger; (this prevents the burger from "puffing up" during cooking. Put in the freezer for 15-20 minutes. I find this works really well, and helps the burgers to stay together during cooking; and time for the flavors to develop. This is optional, but I like to use this technique for burgers. Even a little time in the refrigerator helps to firm them up.
Step 3: Onion Rings ... Make your favorite - but honestly, I use frozen onion rings (Ore Ida, is what I use) for this recipe. I can bake just a few at a time, only what I need - and they take no time, 15-20 minutes in the oven, and they're done (follow package directions). But, make your own if you want. But don't skip the onions, they really make the burger.
Step 4: Grill ... I like to use the outdoor grill, but an indoor grill pan or even heavy cast iron skillet works fine - use what you have. I like my burger medium rare; but obviously cook it to your desired doneness. Add the cheese the last few minutes until melted and gooey. Also, toast your buns if you want; I like mine toasted.
Step 5: Finish and Serve ... Top the bottom bun with a little of the mayonnaise bacon sauce, then the cheesy burger, lettuce, onion rings and finish with the top bun - also slathered with a little sauce. ENJOY! For me, pickles and chips are a must.
