Step 1: Preheat oven to 350°F.
Step 2: Place all veggies in a large baking dish that has been sprayed with non-stick cooking spray.
Step 3: In a small saucepan, melt butter and add all the herbs, spices and garlic. Let simmer on low heat 3 minutes.
Step 4: Then pour over the veggies and mix well with a spoon or your hands.
Step 5: Place in preheated oven for about 45 minutes.
Step 6: *If you can't find Lawry's Tuscan seasoning, just mix these ingredients and use 1 tablespoon for your recipe. Then store the rest in an airtight container.
Step 7: 1 cup finely chopped sun-dried tomatoes (not packed in oil)
Step 8: 1 tablespoon dried Italian herbs
Step 9: 1 tablespoon dried basil
Step 10: 1 tablespoon semi coarse sea salt
Step 11: 1 tablespoon red pepper flakes
