Step 1: Heat the oil in a skillet over medium heat, add onions, cover with lid
Step 2: Stir often, do not let the onions cook too fast or brown too fast. Remove lid when the are getting nicely browned, continue cooking until they are golden
Step 3: Add balsamic vinegar, sugar and salt to the onions, remove from heat
Step 4: Place a generous amount of onions on each baguette slice, top with goat cheese and sprinkle with pine nuts
Step 5: Place in 425f oven for about 10 minutes, or until the bruchettas are heated through and the cheese is just beginning to melt Serve warm
