Step 1: Soak beans overnight. They used heavily salted water.
Step 2: Drain.
Step 3: Next day, saute onions in butter and lightly season.
Step 4: Cook until translucent.
Step 5: Add carrots and turnips and saute for 5 minutes.
Step 6: Add garlic and cook for 1 minute.
Step 7: Add flour cook until lightly browned.
Step 8: Add water and rest of ingredients.
Step 9: Simmer for 90 minutes, adding water as needed, stirring occasionally, until beans are soft.
Step 10: They blended the soup, I'm not but you can.
Step 11: Temper cream and add, and season to taste.
