Step 1: Fold a 36 x 18 inch piece of heavy foil in half to make an 18 inch square. Place onions in center of foil and then sprinkle them with the salt and pepper and then drizzle with the balsamic vinegar and beer (if using). Bring up the two opposite edges of the foil; seal with a double fold. Fold remaining edges to completely enclose the packet of onions, leaving some space for the steam to build
Step 2: Grill packet on the rack of an uncovered grill over medium heat for 25-30 minutes or until onions are tender, turning packet occasionally. Spring onions with thyme before serving.
