Step 1: In a large heavy skillet, sear meat with onion and garlic until lightly browned.
Step 2: Seasoning lightly.
Step 3: Add 5 or more shakes of Tabasco (to taste) and rest of ingredients.
Step 4: Bring to a boil, reduce heat.
Step 5: Cover and simmer for about 1 1/2 hours.
Step 6: Stir occasionally.
Step 7: Skim off fat as it cooks out.
Step 8: Season to taste.
