Step 1: Preheat the oven to 400 degrees F.
Step 2: Slice up the chicken, peppers, and onion into strips.
Step 3: Put the strips into a large ziplock bag and add the olive oil and fajita seasoning. Shake the bag to fully coat all of the ingredients.
Step 4: Arrange the seasoned chicken and veggie strips onto a baking sheet in a single layer.
Step 5: Bake for 20-25 minutes.
Step 6: Optional: turn on the broiler and crisp it up just a bit - approximately 2-3 minutes. (Just watch it so it doesn't burn or get overcooked.)
Step 7: Warm up the tortillas by putting a stack of them into the microwave wrapped in a wet paper towel for about 30 seconds.
Step 8: Serve the fajitas with the warm tortillas and any toppings you'd like to add.
