Step 1: Add oil in a soup pot and add ham and onion
Step 2: Add garlic.
Step 3: Sauté them on medium heat for about 3-4 minutes, or until the onion looks translucent.
Step 4: Add the chopped carrots, pepper and celery .
Step 5: Keep sautéing until the vegetables are soft.
Step 6: Add the frozen beans, paprika, salt, pepper and dried thyme.
Step 7: Add the fresh diced tomatoes.
Step 8: Mix everything well.
Step 9: Add water, dried herbs and potatoes and allow it to simmer for 30 minutes.
Step 10: Taste and season if necessary.
Step 11: Add vinegar little by little to make the soup a little bit sour, but taste the soup to know when to stop. Some people like it to be more sour.
Step 12: Serve a dollop of sour cream in bowl.
