Step 1: Brown pork in hot butter on all sides in deep kettle.
Step 2: Add water and all other ingredients except horseradish.
Step 3: Simmer, covered, for 1 1/2 hours, or until tender.
Step 4: Add water as needed.
Step 5: Transfer meat to hot platter and keep hot.
Step 6: Take cloves out of onion before blending.
Step 7: Force stock through sieve or puree with blender stick so all the veggies are smooth.
Step 8: Season to taste.
Step 9: Pour stock over meat.
Step 10: Top with horseradish.
