Step 1: Potatoes ... Rub the potatoes with olive oil and season with both salt and pepper. Bake the potatoes in a 375 degree oven on the middle shelf. I prefer to line a baking sheet with parchment paper or aluminum foil for easy clean up. Make sure to poke a fork on the top of the potato so they doesn't explode in the oven. They will take anywhere from 40-50 minutes under fork tender.
Step 2: Topping ... Mix the brown sugar and ginger together. After the potatoes are done, slice the top open and squeeze the sides. Use a fork and slightly mash the inside of the potato. Then, top each potato with 1/2 tablespoon of brown sugar, then the pineapple and finish with another 1/2 tablespoon brown sugar and the sunflower seeds / nuts.
Step 3: Serve ... As I mentioned, these are great served with baked ham or grilled ham slices. ENJOY! Note: If using large potatoes, you could scoop them in half and actually make 8 smaller halves using this same recipe.
