Step 1: Mix the first 11 ingredients together (ground turkey through to ground pepper), and form into 4 even patties. Set aside.
Step 2: Pour the oil into a large oven-proof skillet and bring to medium-high heat. Add the patties and cook for about 4 to 5 minutes per side, until you have a nice golden crust and no pink in the middle. (This will depend on how thick you have made your patties. The internal temperature should be 165 degrees Fahrenheit)
Step 3: Remove the patties and set aside.
Step 4: Preheat oven to 350 degrees Fahrenheit.
Step 5: Pour the wine into the skillet and cook over medium-high heat, scraping up the bits on the bottom, until it is reduced by half.
Step 6: Place 2 tablespoons of the turkey broth in a small bowl and set aside.
Step 7: Pout the remaining broth into the skillet, and bring it to a boil over high heat.
Step 8: Mix 2 tablespoons cornstarch with the 2 tablespoons turkey broth that was set aside and pour into the boiling broth. Whisk until it thickens, then remove from heat.
Step 9: Put the patties into the skillet and place in the oven.
Step 10: Cook for 30 minutes and turn over, cook for another 30 minutes or until the gravy is bubbling around the patties.
Step 11: Serve with mashed potatoes to drizzle the gravy over.
