Step 1: Cook the diced onion, pepper and carrots in the melted coconut oil in a large pot until tender.
Step 2: Add the ground turkey and cook until no longer pink.
Step 3: Add the remaining ingredients, bring to a boil and then simmer for one hour.
Step 4: Add noodles and stir well. Serve topped with cheese, if desired.
