Step 1: Place the pork and onions in a 6 quart stock pot. Add enough water just to cover.
Step 2: Season with salt and pepper to taste.
Step 3: Place on high heat and bring to a boil.
Step 4: Cover, reduce heat to medium-low and simmer until pork is very tender, about 1 hour.
Step 5: Remove pork from pot.
Step 6: Skim fat off.
Step 7: When cool enough to handle, take the meat off the bones and cut into small pieces.
Step 8: Reserve for later.
Step 9: Add the turnips and carrots to the broth.
Step 10: Add more salt and pepper to taste.
Step 11: Bring back to a boil, then reduce heat, cover and simmer until turnips are tender, about 30 minutes.
Step 12: Add the reserved pork and cook another 5 minutes. Taste for seasoning.
