Step 1: In a medium size saucepan, mix together the beet juice along with remaining ingredients, except beets.
Step 2: Whisk to combine thoroughly and bring to a boil over medium heat.
Step 3: Cook, whisking constantly until mixture begins to thicken.
Step 4: Stir in beets and continue to cook for 3 minutes more until sauce clings to beets.
