Step 1: Bring a large pot of heavily salted water to a boil.
Step 2: Meanwhile, heat 1 tablespoon of the oil in a Dutch oven over medium-high heat until shimmering.
Step 3: Add 5 sliced hot dogs and cook, stirring occasionally, until browned all over, about 3 minutes.
Step 4: Using a slotted spoon, transfer to a medium bowl.
Step 5: Add the remaining 1 tablespoon oil and garlic cloves to the pan.
Step 6: Cook until lightly browned, about 30 seconds.
Step 7: Add onion and cook, stirring occasionally, until softened, about 3 minutes.
Step 8: Add ground beef, bay leaf, salt, and black pepper to taste.
Step 9: Cook the meat to bite-size pieces, until browned 8 minutes.
Step 10: Add 2 tablespoons tomato paste and cook, stirring frequently, until the tomato paste is slightly caramelized, about 1 minute.
Step 11: Stir in the hot dogs, tomato sauce, 1 cup water rinsing out can, ketchup, soy sauce and fish sauce and simmer, stirring occasionally, until the sauce thickens,10 minutes.
Step 12: Meanwhile, add spaghetti to the boiling water and cook until al dente, drain and return to the pot.
Step 13: Add 3/4 of the sauce (about 5 cups) and toss until the pasta is evenly coated.
Step 14: Remove bay leaf and season to taste.
Step 15: Serve topped with the remaining sauce and shredded cheddar cheese.
