Step 1: Mix first 4 ingredients (parmesan - Italian seasoning) in a shallow dish; set aside. Add melted butter to a bowl, and place chicken in bowl, working the butter all over the chicken (add more butter if needed).
Step 2: Dip chicken in cheese/Italian dressing mixture, turning to evenly coat all sides. Thread onto skewers. You may want to let the chicken marinate for about 30ish minutes (or cook it right away).
Step 3: Place skewers on hot-medium grill and cook between 12 - 20ish minutes or until it is no longer pink in the center and juices run clear, turning skewers every so often to cook evenly on all sides. An instant-read thermometer inserted near the center should read 165-degrees F (74-degrees C). The time it takes to cook has also to do with the size of the chicken skewers.
