Step 1: Heat frypan to medium heat and add butter and cook mushrooms for 8-10 mins or until browned and then add garlic and cook for 2 minutes or until aromatic, add the dry sherry, mustard and cream and bring to a simmer.
Step 2: Reduce heat to low and simmer for 10 minutes or until the mixture thickens slightly, season and stir in parsley.
