Ingredients
- 1 tablespoon olive oil
- 1 cup onion, chopped
- 1 cup frozen okra, sliced
- 1 cup green bell pepper, chopped
- 5 stalks celery, chopped
- 4 cups chicken broth
- 12 ounces andouille sausage, sliced
- 7 ounces dry brown rice
- 16 ounces dry black eyed peas
- 1/4 teaspoon liquid smoke
- 1 teaspoon Cajun seasoning
- 1 teaspoon ground sassafras leaf
- 10 ounces diced tomatoes and green chiles (Rotel) (1 can)
- 15 ounces diced tomatoes (1 can)
- 2 cloves garlic, finely chopped
How to Make

Step 1: Soak peas overnight and drain.

Step 2: Pam spray crockpot

Step 3: Add peas to crockpot.

Step 4: Set on low and cook 8 hours, adding water as needed.
