Step 1: Preheat oven to 375 degrees F.
Step 2: In a skillet, brown onion and meat and remove from heat.
Step 3: Drain if needed.
Step 4: Mix in potatoes, chopped eggs, parsley, and garlic powder.
Step 5: Season to taste.
Step 6: Stir in beaten eggs and blend well.
Step 7: Place mixture into a lightly greased 9-inch round pan (pie plate) or an oven proof casserole.
Step 8: Bake for 45 minutes.
Step 9: Serve in wedges.
