- 4 green onions, sliced

- 1/2 teaspoon pepper
- 15 ounces grapefruit, drained, chilled (1 can)
- 15 ounces whole beets, drained, chilled, quartered (1 can)
- Dressing
- 2 tablespoon extra virgin olive oil
- 2 tablespoon apple cider vinegar
- 1/2 cup walnuts, toasted, whole
- 2 ounces blue cheese, crumbled
