Ingredients
- 16 ounces kielbasa sausage, sliced very thin
- 1 cup yellow onion, chopped into 1/2-inch pieces
- 1 tablespoon bacon grease
- 28 ounces hominy, drained (1 can)
- 7 ounces chopped green chile (1 can)
- 12 ounces sour cream (1 1/2 cups)
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 8 ounces pepper jack cheese, shredded (1 cup)
How to Make

Step 1: Heat grease and add onions and sausage.

Step 2: Cook until light brown.

Step 3: Add hominy, green chilies and seasonings.

Step 4: Mix in sour cream and cheese, cover don't boil, let cheese melt and season to taste.
