Step 1: Put all ingredients, except Stevia, into a 2 quart glass jar (it must be glass) with a well fitting lid; mix until sugar is dissolved. You must use cold water. Warm or hot water will kill the grains.
Step 2: Replace lid tightly and put on the counter for 24 hours. The liquid should start bubbling in that duration.
Step 3: After 24 hours, remove the fruit and ginger slices and discard. Strain out the grains and save them for the next batch. If not ready, put in a small glass jar, cover with water and mix in a little sugar (to keep them alive).
Step 4: This is easiest done by pouring the contents through a small mesh strainer into another container. Put the liquid back into the 2 quart glass container and add stevia to taste.
Step 5: At this point, you can either bottle it and keep on the counter or in the pantry, or keep it tightly sealed, either on the counter or in the fridge. The fridge tends to kill some of the fizziness though. Bottling it will develop the fizz more. Some people try putting it in small canning jars.
