- 2 avocados, diced
- 2 kiwis, peeled, diced
- 1 cup red onions, minced
- 1 pound cooked shrimp, peeled
- 4 cups fresh baby spinach
- Dressing
- 1 tablespoon honey
- 1/2 teaspoon garlic, smashed
- 1/4 cup lime juice
- 1 teaspoon Dijon mustard
- 1 tablespoon olive oil, EVOO
- 1/8 teaspoon salt
- 1/8 teaspoon lemon pepper to taste
